The fast rising young professional knocked out challenger Benji Dimitrioski two mins into the final of eight scheduled rounds at the Seagulls club.
Mitchell's trainer, Ian 'Sparra' Stapleton said the triumph was comprehensive.
"He dominated every round and in the eighth he just unleashed and clocked him a beauty and it was all over red rover," Sparra told the Guardian.
The result moved Mitchell's record to five wins, a draw and a loss - and the young man has now set his sights on chasing the Australian title.
Against Dimitroski, Mitchell started cautiously, but gradually built on his work, and rocked his opponent on several occasions.
