STUDENTS from Macksville High School have once again performed with distinction at the ‘Future Chef’ team challenge at Coffs Harbour, organised by Directions Plus - Youth Directions.

Macksville High won prizes in two categories:
* Champion school for shortest distance (food miles) travelled for a three course meal - $100 prize from the Coffs Farmers’ Market.
* Head Chef Award - Harry Mitchell - a trio of gourmet products.
It was the second time Harry had excelled in the competition and he was understandably delighted.
“It was such a great experience to work with my friends as a team. It was hard work but it paid off in the end,” he said.
Harry, Jake Fallowfield, Tayla Fuller, Amber Nicholas, Brooke Chapman and Ellie Scafidi - assisted by their hospitality classmates - spent the first two weeks back at Macksville High preparing for the challenge.
The team entered their mock restaurant as ‘Macbuff @ Macksville’. A three course menu was planned:
Macmeadow Frittata - petite frittatas made from farm fresh eggs, spring vegetables and herbs, topped with
buffalo Moroccan quark and Hastings tasty cheese. Served with a taste of macadamia chutney.
Macbuff char grilled Beef and Citrus Salad - garden fresh salad topped with marinated Simpson’s Ridge rump steak, buffalo Persian feta and roasted macadamia nuts. Finished with a tangy, lillipilli dressing and a bite of finger lime.
Macmallow Pavlova - macadamia marshmallow pavlova, freshly whipped cream, seasonal fruits and mulberry coulis served with vanilla buffalo gelato.
The focus was on fresh local ingredients and the school was assisted by local producers Ausbuffstuff, Valley of the Mist, Nambucca Macnuts, Macksville Quality Meats, Macksville Community Gardens and Macksville High School’s ag plot.
Special thanks also go to the wider school community who donated their own home grown produce allowing costs and food kilometres to be kept to a minimum.
